2 brown onions, sliced
2 tbsp balsamic vinegar
2 tbsp butter
½ brown sugar
2 tsp fresh thyme leaves
4 sheets frozen puff pastry
4 eggs, lightly beaten
2 tbsp cream
1 wheel Margaret River Dairy Co Camembert
Melt the butter in a small heavy based fry pan over medium heat. Add the onions and cook for about 5 minutes, stirring frequently. Turn the heat down to low and add the balsamic vinegar and sugar. Allow to cook on low for about 10 minutes and stir occasionally until the onion is caramelised. Set aside.
Spray with olive oil four small tart shells and line them with the puff pastry, trimming away the excess. Combine the cream and the eggs and then pour the mixture evenly between the tarts.
Break the brie into roughly torn pieces about 2cm in diameter and divide the pieces up into four equal piles. Fill each tart with the brie and then do the same with the onion and drop it into the tarts. Season well and top with a sprinkle of thyme.
Bake for 10 minutes or until the egg mix is set. Serve with a green salad.
